This is one of my all time favourite dips to go to.
Healthy, high protein and so, so Creamy...you are sure to add this to your favourites list!

Serve with carrots and cucumber for dipping as a snack or great with pitta or arabic bread or even some crackers!

Ingredients
For the date pistachio honey topping

2 tablespoons honey
1/4 cup roasted and unsalted pistachios, finely chopped
1/4 cup finely chopped dried dates
2 tablespoons water
For the feta dip

8 ounces feta cheese in brine, drained and crumbled
4 ounces Greek yogurt, at room temperature
1/3 cup extra virgin olive oil
1 tablespoon fresh mint leaves, minced
1 small clove garlic, grated or finely minced
1/8 teaspoon salt
1/4 teaspoon black pepper

Make the date pistachio honey topping:
In a small bowl, stir together the honey, pistachios, dates, and water. Place the bowl in a microwave and heat for 30 seconds, just until the mixture begins to bubble. Let cool to room temperature

Make the creamy dip:
Into a food processor, add the feta, Greel yogurt, olive oil, mint, garlic, salt, and pepper. Pulse for 30 seconds to 1 minute until smooth and creamy.

Add the cooled date pistachio and honey to the centre of your creamy dip, refrigerate for 1 day or overnight and enjoy πŸ˜‰
